Ingredients
2 egg whites
1/2 cup (125g) castor sugar
4oz (125g) grated semi-sweet (plain) chocolate filling
4oz (125g) semi-sweet (plain) chocolate
1/3 cup (90g) sour cream
Method
1. Preheat the oven to 300 deg F (150 deg C) and line to oven trays with non-stick paper.
2. Beat egg whites to soft peaks, then gradually add the sugar, beating all the time. The mixture should be thick and shiny.
3. With a metal spoon, carefully fold in the grated chocolate.
4. Put the mixture into a piping bag with a 1/2 inch (1cm) fluted tube. Pipe stars, about an one inch in diameter, on to the lined trays. Keep them about an inch apart.
5. Put them in the oven for about 30 minutes until the surface of the meringues is crisp. Turn off the oven and leave them there with the door slightly open until the oven is cold.
6. The Filling: Put the chocolate and sour cream into a bowl and place over a pan of simmering water (the bottom of the bowl should not touch the water). Stir continuously until the chocolate has melted and the cream and chocolate are well mixed and smooth.
7. Remove from the heat and cool but the mixture should still be pliable, not set.
8. Sandwich the meringues together with a teaspoon of the chocolate filling. You can dust them with cocoa if you wish.
